Rose cookies (Achappams) Recipe

Rose cookies are good looking and tasty snacks of South India, especially in Kerala. These are prepared for evening snacks and during Christmas time.

Items required

  • Maida - 250 g
  • Eggs- 2 Nos
  • Coconut milk - 1/2 cup of coconut milk
  • Sugar - 1 tbl.spoon
  • Salt - a pinch
  • Oil - 1 cup
  • Black sesame seeds (til) - 1 tsp.
  • Baking powder - 1 pinch
  • Rose cookies-Achappam

    Method of Preparation

  • Sieve maida well and place it in a bowl.

  • Break the eggs and pour the contents into another bowl, and beat it well.

  • Add sugar and the salt, baking powder, and the sesame seeds and mix well.

  • Add the egg mixture into the maida and mix well.

  • Add the coconut milk and mix well again.

  • Keep a kadai or frying pan on the stove and heat the oil.

  • Keep the mould (a special mould for making rose cookies) in the oil to get heated.

  • Remove the mould from the oil, and stir it for a second to remove the excess oil, and then dip it half way in the batter.

  • Remove it immediately and place the mould back in the oil. After a second or two, start shaking it so that the cookies will leave the mould and fall in the oil.

  • Fry the cookies on both sides till golden brown and remove them onto a paper to drain well.

  • Continue making cookies from the remaining batter.

  • When ready,store them in an air tight container.
  • Tips:

    • Check the consistency of the batter, and if necessary add a little water, to get dosa batter consistency.

    • Care should be taken to see that the mould is not fully dipped in the batter, by mistake. Otherwise the cookieswill not come out of the mould when you place it in the oil and shake.

    • Instead of maida, you can also use rice flour.
