Palpayasam Recipe

Palpayasam is a simple recipe without any additional flavour. It is easy to cook, and yet it is very tasty. It is the king of payasams. Ambalappuzha Palpayasam is very famous in Kerala.

Items required

  • Rice - 1 cup

  • Sugar - 2 cups

  • Milk - 1 1/2 lts.

Method of Preparation

  • Boil the milk with sugar in a pressure cooker.

  • Add the rice and close the cooker. Cook it for about 5 minutes.

  • Remove the lid after 15-20 minutes, and cook again on slow fire.

  • Keep stirring the payasam until it is thick.

Note:

The pressure cooker should be extremely clean, otherwise the milk curdles. To ensure the cleanliness, sterilize the cooker by boiling water in it for few minutes, before pal payasam is made.

The payasam should be cooked on slow fire to get its thickness, which makes it tasty.
