Appam with Mutton Stew

Find out how to make Appam with Mutton Stew, a Kerala style breakfast.

Appam - Items required

Rice - 1 1/2 cups

Urad dal - 1 tablespoon

Coconut scrapings - 1 cup

Cooked rice - 1/2 cup

Coconut water - 1 cup

Sugar - 1-2 tsp.

Salt - to taste

Preparation :

After soaking the rice with urad dal for about 6 hours, grind it coarsely with required water. Then add cooked rice and coconut scrapings.

Grind the mixture well, and add coconut water, sugar and salt.

Mix well and keep it overnight.

Next day morning, stir once again well with a laddle.Keep the appam making vessel on the stove, and smear it with little oil. When it is hot pour one laddle of the mixture and spread it without using the laddle, and cover it up. Keep the fire low.

Take it out after about 2 minutes, and you will get the fluffy and tasty appams. Prepare the remaining mixture in the same way.

Mutton stew is a good combination with Appam.


How to make mutton stew?

Items required

Mutton pieces - 500 gms.

Potato pieces - 100 gms.

Carrot pieces - 100 gms. (optional)

Ginger cut into small pieces - 1/2 tb.sp.

Garlic pieces - 1/2 tb.sp.

Green chillies - slit into two pieces - 5

Chopped onions - 1/2 cup

Coconut milk - thick - 1 cup

Coconut milk - thin - 2 cups

Cloves - 5 Nos

Pepper corn - 1 tsp.

Cinnamon - 1 piece

Cardamom - 5

Salt - as required

Curry leaves - 3 bunches

Mustard seeds - 1 tsp.

Cooking oil - 2 tb.spoon.

Preparation

Keep the cooking pan or cooker on the stove, add 1 tbsp. oil.

Add cinnamom, clove, cardamom, onion, ginger, garlic, and green chillis, peppercorns and saute for 2 minutes.

Add mutton pieces, thin coconut milk and salt. Cook for 10 minutes.

Add the vegetables (potato and carrot), and cook for another 10 minutes.

When it is almost done add curry leaves and cook for 1-2 minutes.

Add thick coconut milk. Mix it well with the stew, and cook for 1-2 minutes. Don't wait for it boil. Remove it from the stove.

Season it with the remaining 1 tbsp. oil, mustard seeds and curry leave. Even without seasoning the stew, it will taste fine.

Now appam and stew are ready.
